Strawberry Shortcakes...YUM!

I came across this recipe on the internet and had to share...it looks DELISH!

Strawberry Shortcakes

3 cups flour

1/4 cup sugar

3 tsp baking powder
2/3 cup cold butter; chopped into small cubes

2 eggs

zest of one lemon

Preheat oven to 450 degrees

Combine dry ingredients. Cut in butter until completely incorporated and mixture looks like small crumbs. Set mixture aside.

Add eggs to a separate bowl and whisk. Add milk and lemon and whisk once more. Pour into the bowl of dry ingredients and stir, just until moistened.

Dump dough onto heavily floured surface and gently work into a rectangle 1" thick (this will be messy but be patient and it will come together). Using a biscuit cutter, cut into individual biscuits. Place biscuits onto ungreased cookie sheet and bake for 8 to 10 minutes, or until puffed and golden brown and centers are separated (so that once they are cooled you can just split them apart).

Layer shortcakes with whipped cream and fresh strawberries. (If the berries are large slice before serving)

Passover Brisket

For those of your who celebrate Passover and have been asking for my brisket...here it is! Plus a delish dessert. Oh, and FYI, I'm Catholic but my husbands Jewish and I live for new recipes!!!!

SWEET n' SOUR BRISKET

Simple!

You need : a 5 lb brisket, 1 box DARK brown sugar, 32 oz sauer kraut, 28oz WHOLE stewed tomatos

The night before face the fatty side up, drain and add sauer kraut, then add entire can of tomatoes, then sprinkle on brown sugar cover with foil. Cook 3 hours at 350. Left cool 2o or so minutes. Flip the meat over then slice and spoon all the stuff on the top. Leave covered and refrigorate. Then the next day cook another 1 1/2 hours and serve.

DELISH!!!!

APPLE, CRANBERRY, CHERRY TORTE

5 greenish chopped peeled apples

1 can bing cherries drained (NOT comstock)

1 can chunky cranberry sauce

2 1/2 cups brown sugar

2 1/2 cups sifted white flour

1 3/4 cups oatmeal (instant)

1 1/2 sticks SOFTENED butter (or margerine)

1 1/2 pumpkin spice

take a 9" spring pan and grease it. Mix up dry ingrediants (except spice) with the butter.

Take all but 3/4 cup of this mix and smash in along the bottom of spring pan and along the sides

(like a crust) Mix apples, cherries, cranberry sauce with 2 tablespoons of flour and the pumpkin spice. Pour it in the pan. Take the remaining mix and spread in on the top. Add a few walnuts

and back for 45 minutes at 375 OR 30 minutes the night before, refrigorate and back the extra 15 or 20 minutes the next day. YUMMY, YUMMY with some vanilla ice cream.

Of course, all of my recipes are fat free :)

Double Chocolate Macadamia Nut Cookies...YUM!

Here is a delicious recipe for double chocolate macadamia nut cookies...what could be better?

Double Chocolate Macadamia Nut Cookies

(makes 9 dozen)

2 large bars dark baking chocolate (at least 60% cocoa) chopped into chunks (not too small)

2 large bars milk baking chocolate or 1 large bag milk chocolate chips

8 oz. unsalted macadamia nuts -chopped

2 cups softened butter

1 1/2 cups packed dark brown sugar

1 cup white sugar

2 eggs

5 tbsp vanilla

4 cups all purpose flour

1 tsp salt

2 tsp baking soda

Cream butter, sugar and brown sugar

Add 2 eggs and vanilla

Sift flour, baking soda and salt and add to creamed ingredients

Hand mix in nuts and chocolate

Chill for at least 1 hour

Drop off spoon on ungreased cookie sheet 2" apart

Bake in a 350 degree oven for 12-15 minutes

ENJOY!!!

HAPPY 4th!!! A day to remember that we have our independence and we should feel grateful! It is the day we celebrate our Declaration of Independence...that piece of paper that freed us from Britian and helped to established our beautiful country. No matter your situation (with the times as they are) is there anywhere else you would rather live? Anywhere that could give you the opportunities you have?

Did you know...That it is myth that the declaration was signed on July 4th? The 4th was the day we separated from Britian and the day that the Declaration was completely edited...however it wasn't signed by everyone until August 2 1776. As a total coincidence, both John Adams and Thomas Jefferson, two founding fathers of the United States and the only two men who signed the Declaration of Independence to become president, died on the same day: July 4, 1826, which was the United States' 50th anniversary.

Well, well, well, you never know who will show up in Brentwood Village. Could be Reese Whitherspoon, Harrison Ford, Dennis Hopper, Gene Simmons, Leeann Rimes OR could be our new President Obama. He landed just a few hundered yards from Jennifer Knits at our local dog park. With minimal disruption to neighbors he sped thru to speak at at the Beverly Hilton Hotel.

Summer is just around the corner

Hello Friends and Yarn-a-holics,
Well spring has sprung and summer is just around the corner. That means fabalous new light-weight yarns have arrived! The store is over flowing with delicous new fibers and lots of sales. I have been working on fashionable new patterns like a great v-neck oversized poncho. Marcia, my best friend, has been a great addition to the store which allows me to do more patterns.

Exciting new news is my new "Disco Lights" shrug is going to be featured in the new Tilli Thomas ad. Look for it in the next Vogue Knitting. I had a very refreshing trip to Colorado with Allana and my mom. Being outdoors had got me so excited for the breathable summer yarns. ...Something a friend told me once. For the past 3 years I've been preparing myself for the loss of my Mom, more so when her cancer began to worsen this summer. The loss, sadness, explaining death to my children. All these things I rehearsed and accepted.

Tuesday December 2nd my ex husband, Frank, passed away suddenly. He was turning 40 on December 8th. I'm not ready for this. Telling my children was the hardest thing I have ever had to do. How Mommy? Where is he now Mommy? Is he sad? Will he still give me my Christmas presents? Can I still give him his present? What will happen to his bird Charlie?

I have strong faith, and I live and teach to forgive and be caring and to love unconditionally. So I know my children have no regrets. My children loved their Daddy very much. I loved their Daddy for giving me them. They are all that is good from both of us.
Monday I was so worried about Jennifer Knits, finishing sweaters for the holidays, getting all of you your yarn and patterns quickly, all of my Chamber of Commerce duties, etc. etc. Today I am so sad and my heart aches for a loss I can't explain or understand.

Cranberry Surprise Martini's

1 part Citron Vodka

2 parts Cranberry Juice (oceanspray 1/2 part Grenadine

a few shakes of orange bitters

3 limes cut, sqeezed and throw in

a bunch of ice, and come fresh rasberry or cranberrys. Stir it up!!!!

The Best Stuffing EVER!!!

1 box Stuffing (two 6 oz bags not cornbread)

1 red onion and 1/2 sweet onion totally diced

2 apples gala chopped

a few stalks of celery diced

a ton of butter

chicken broth 2 2/3 cups

cilatro, green onions diced, a dash of tarragon

brown the celery and the onions (not the green onions) in some butter . Now mix everything together except the broth, butter and green onions. Add a little salt and WHITE pepper and mix some more. Now melt a cube of butter in the broth in the microvwave with a little fresh garlic. Pour it over everything and toss. Bake covered for 1 on 350, then thinly slice some more butter and throw in on top with green onions. cook another 15 minuters or until a little crisp! YUMMY YUMMY, let's go eat!

Don't Wait for Tomorrow What You Can Do Today

In 1997 I asked my OBGYN to send my Mom an appointment card to get a mamogram. Why? She hadn't seen a doctor since 21 years prior when she gave birth to my baby sister. Her first mamogram revealed the very reason she had avoided it. A 2cm malignant tumor. Two lumpectomies and four opinions later I helped her make the decision to have a radical mastectomy (right breast). I thought as the doctors told us, with this aggresive procedure, 6 months of chemo and 5 years of tamoxifen that she had a less than 5% chance of it moving to the other breast. And...that was all correct.

Early 2003 my Mom (pictured right, best friend's mom left) started complaining about back pain. Her GP told her she was overweight. She got more aches. Her shoulder, hips, legs. She felt light headed, her memory shot. The problem? "You are very overweight, pulling muscles and you're tired". Then she got numbness and burning in her foot and toe. Her GP ? "You have a severe ingrown toenail". Her abdominal pain worsened. "Mrs. Wenger, You keep pulling muscles from because you are overweight!"

Finally (mid 2004) I had enough of her LOSER GP and I was going with her. "Don't upset the Doctor" my Mom cries. Again with the "overweight, oh, and by the way I forgot to mention your Mom has Gallstones". Now I asked "Are you sure this isn't from my Mom's cancer?". Answer "Yes". "Are you 100% percent sure and will you write that in her notes?" Answer "No"

Next month will be THREE years since my Mom was diagonosed with Metastatized Breast Cancer. If you met my Mom you would have no idea. Tumors all over her body and skull. She's three inches shorter from the cancer eating her spine. The numbness and burning in her foot, a tumor hit a nerve. The miracle drug Arimidex shrunk all my Mom's tumors. Seeing my Mom's MRI with black spots everywhere...and then they start shrinking. But now, THEY'RE BACK!!!! The Arimidex is no longer working, we're trying another drug faslodex. The side effects are horrendous. She's really have a hard time. But she's always laughing, she still wants to help with my three girls. And, were going to VEGAS next month.

Why is Jennifer sharing this? My Mom is one of my best friends. She oozes unconditional love and fantastic advice. She's always laughing and can even find humor in my BI-Polar father that drives us all nuts. I'm not ready for my Mom to be sick. I'm not ready to lose my Mom. I love my Mom so much.

I don't want to make you sad, or stir up hard memories. But, I care about you. You are my inspiration, my livelyhood, my friends, mentors and peers. I want you to take good care of yourselves. For the people like me who need you. A little bad news today may prevent years of pain and sickness. My mom had stopped her treatment early, her fear kept her from being proactive. Her fear kept her from her oncology check ups.

In addition to regular check-ups and mamograms please keep your minds healthy. Stress and worry are toxic and lesson the successful recovery from any illness. Don't sweat the small stuff.
It's true. If it already happened or hasn't happened yet...forgettaboutit! AND BY ALL MEANS ENJOY TODAY AND SMILE. Call that sister that drives you crazy, tell your kids you love them (even the ones you don't speak to), tell your parents thanks, forgive that ex-husband, buy those PRADA sunglasses, climb Machu Picchu, don't obsess about the stock market, don't hate anyone, eat a big steak, get a massage, live right, be charitable, say good morning to person getting your coffee.

Do whatever makes you and the people around you feel good. TODAY. And, thanks for being there for me :)

I'm a very lucky lady...I have three adorable daughters who all made and wore "I love my Mom" t-shirts to Disneyland (although they refused to be photographed in them, even the 2 year old!) I was also lucky to get to hug my Mom for another Mother's day. Life is precious. Live every day sharing kindness and thoughtful words with the people whom you care about.

I was inspired late one night watching a Chanel Fashion show from the 40's or 50's when clothes and sweaters were all made by talented seamstresses and knitters. Luckily for us, today's designers are once again creating timeless beauties for us to wrap around our bods. Try this sassy 100% Italian Bolero. Bobbles are crocheted all around after your sweater is assembled. Works up fast on #10 1/2 or 11 needle. I won't a simple yet slightly challenging pattern.

After many shopping trips downtown, to Restoration Hardwear, the city of Vernon, Home Depot, Loew's, etc, etc, etc, I was referred to this amazing place. Liz's Antique Hardware. They have a GIGANTIC room filled with knobs, hooks, keyholes and everything in between all ANTIQUE. Then there is another room filling with beautiful reproductions. Liz's Hardware is a decoraters dream come true. It's in L.A. on La Brea south of Wilsure. The staff is super friendly and helpful too. I just had to pass this along.
